My first thought when seeing the recipe is that would be darn good with pumpkin, and you know it was. I made half beef and half pumpkin. I really should have done them seperately because of the diffrent cooking times but I am lazy.
The night I made it I had a couple of tortillas with beef and sour cream that was delicious. The rest I packed up and took for lunch the next day with jasmine rice. I learned two things. Rendang is even better the next day and the lights at work are great for pictures.
The pumpkin rendang was great, if I had been thinking I would have had some pepitos to sprinkle on top for crunch. Or maybe some toasted coconut.....

Great job--Veg and meat. Excellent.
ooh, pumpkin rendang is a great idea and very seasonal!
The pumpkin does sound great! Good thinking. Love the combination of rice, pumpkin and randang. It was a great challenge.
Yum, the pumpkin sounds great! I think you're right on with the yougurt sauce. The dish is pretty rich and a bit of tang really sets it off. You'll have to let us know if the crock pot makes it easier!
Your pumpkin rendang sounds amazing! I am going to have to try that. Serving this with flatbread was my thought too (after the fact of course). Great job.
I think the crockpot is a great idea. I did the potatoes, but I'm going to try the beef for my husband next time!
i'm with you about using the crock pot next time around! the constant stirring and monitoring! it was worth it in the end tho.
and i'm having it for lunch at work for the 2nd day in a row, i am not complaining!
Pumpkin rendang sounds delicious and unique! I love the idea. I'm thinking this might be a good idea for a Thanksgiving side dish :)
Oooh, interesting! I've never heard of rendang, but I do love curry.
It looks delish!
